Histological assessment of the quality of groundmeat semi-finished products

چکیده
The article deals with the problem of quality pork and beef groundmeat semi-finished products A category. research was conducted in city Perm 2021. study used organoleptic histological methods. analysis showed full compliance tested requirements regulatory documents. As a result research, violations GOST 32951-2014 were recorded: number samples, mass fraction skeletal muscles ratio 1:1 adipose tissue. Most samples (85 %) included presence connective cartilaginous tissues. biological hazard meat established – 100% contamination by parasites genus Sarcocystis spp noted. sarcocysts studied us varied from 3 units preparation to 4 field view.
